This recipe comes from Death & Co via their Cocktail Codex.

Ingredients

• 2 oz Beefeater Gin
• 3/4 oz simple syrup
• 3/4 oz lemon juice
• 1 egg white
• 2 oz cold seltzer

Instructions

• Add all ingredients to a shaker
• Dry shake
• Add ice and shake again
• Double strain into a chilled Collins glass
• Slowly add seltzer until the foam reaches just above the top of the glass (it may help to tap the glass on the counter to help the foam rise while you're pouring in the selzter)
